Lollipops and Rainbows

With summer comes afternoon showers and with afternoon showers come indoor activities. Good thing Luke and Ashley like to cook! With rain on the radar, we decided to make lollipops. Well, I made them, they helped measure and pour the ingredients into the pot. And of course, they ate them. I will put the recipe on here for those of you who asked me. The recipe serves 16, but I thought it would be more fun to make gigantic ones.

Eventually it turns into a sticky mess, but easy to clean.
First taste.
Then they tasted each others.
After a day of rain, a rainbow appeared. Ashley LOVED it!
Luke had no interest.... He's all boy.

Lollipops
1. Evenly space 16 Popsicle sticks on a buttered cookie sheet.
2. In sauce pan heat: 1/4 c butter, 3/4 cup sugar, 1/2 cup light corn syrup. (add any flavor you like here cinnamon, mint etc. or leave it plain). Cook over medium-high heat, and stir until it boils. Reduce heat to medium, and cook until mixture reaches 270 degrees. Stirring often.
3.. Add food coloring
4. Drop the mixture by tablespoon onto the end of each Popsicle stick. Cool
5. When they are cool, take them off cookie sheet and wrap them in plastic wrap.

I am thankful to have the opportunity to spend afternoons in the kitchen with my children.
